Crispy Grilled Chicken with a dash of Herbs
Skinned chicken pieces – 4 pounds
Toasted Whole-wheat bread crumbs -2 cups
Minced fresh herbs (2/3 cup) – The herbs should consist of 6 tablespoons of chopped scallions, a tablespoon of sage and one of rosemary)
Crushed cloves garlic – 2
Cracked black peppercorns – 2 tsp
Extra-virgin olive oil – 2 tbsp
1. Remove about half the rind from the lemon and cut the lemon into thin strips and squeeze out the juice from it. Mix the lemon rind, juice, peppercorns and garlic and put it in a large plastic bag and shake well to homogenize the mixture. To this plastic bag, add the chicken pieces and exhaust it. Then seal the bag, marinate this mixture for about 2 hours.
2. Preheat your grill to about medium-high temperatures.
3. In the meantime, mix crumbs and herbs in a large sized, shallow dish. Take out the chicken, remove the pepper and the lemon rind and coat each piece carefully with the mixture of crumbs and herbs.
4. Paint oil onto the grill rack and then place each piece of chicken on it and grill the pieces thoroughly, turning them every 10 mins. Grill until the juice from the chicken stops leaking out! Serve hot!
